I knew elementary school was going to be life-altering for Annabel, but I was totally unprepared for how much it was going to impact our entire family. I have Annabel and James on a good schedule, but I really didn’t consider how much their new schedules would impact mine. I really thought I was going to be able to get so much done while Annabel was at school, but that hasn’t been the case at all. Between drop-off, pick-up, and volunteering at the school, I feel like I’m actually getting less done during the day. I know this isn’t always going to be the case (I definitely see a light at the end of the tunnel), but this first month has been rough on my time management.
In August I had the foresight to schedule a Blue Apron family plan delivery for the third week of school. It came the day after we got back from New York – seriously perfect timing because our cupboards were bare.
We were sent two delicious meals – Sweet & Sour Stir-Fried Beef with Udon Noodles, Green Beans & Bok Choy, and the one I was most excited about, Southern-Style Shrimp “Boil”
with Corn, Potatoes & Green Bean Salad.
This is one of my favorite meals I’ve made, ever – and it was so easy!
As always, the fresh ingredients were sent in the exact right proportions.
I really liked that I could boil the corn and beans in the same pot – AND, when they were done, I threw the potatoes in the same water! Yay water conservation!
Then, everything (other than the beans, which were for a side salad) went into a pan with butter and shrimp boil seasoning, where I mixed it all together for a few minutes until the shrimp was done.
It smelled so good. SO GOOD.
I had about 12 helpings. I couldn’t get enough of it.
Mike loved it. Annabel thought it was “too spicy.” MORE FOR ME THEN THANKS.
James is obsessed with corn, so he was happy.
I never, ever would have tried something like this before it was sent to me, so it’s another win for having me try new things. I already have the ingredients in my fridge to make it again!

I signed up last time you posted, intending just to try a few weeks and then cancel. But I loved it and have been getting weekly deliveries the last 3 months. I thought at first it was pricy but it really isn’t. The two person plan feeds me and my boys and I still usually have leftovers for work. I love that I’m learning new techniques and cooking recipes I NEVER would have tried on my own. It’s also so much healthier. I love to open my frig and see all the vegetables.

Aw, that looks so good! I miss Blue Apron. I signed up when you posted about it a long time ago and we loved it. It really is cheaper even though it may not seem like it looking at the prices! We’re doing the South Beach Diet now and there are so many things we can/can’t have we cancelled it for the time being but it was wonderful! Plus, you try new things you never would have tried (like black garlic and farro!)

Love Blue Apron! The only thing I haven’t liked lately is that every meal has had a white starch (lots of noodles, rice, bread, potatoes) and I’m trying to avoid those things. They used to mostly have interesting whole grains that I had never tried before.
Where I live we call that dish Low Country Boil and we also throw some sausage in there with it. So good!

Ignore what Blue Apron calls it; that is a low country boil, m’dear. Add some sausage and crawfish (in the summer) for a true southern treat. Mmm. It’s made to serve a lot of people quickly (hence the one-pot deal!) and it’s divine. Mmmm.

Looks delicious!!! Thinking of giving Blue Apron a try. Question, though: can you enter food preferences that they will take into account? I can’t eat anything with cheese, for example, and if that were one of the meals, it would go to waste. Thanks!

Yes! You can enter in all preferences, allergies, etc! And then, you get to approve all the meals before they’re sent – you get a reminder email a day or two before your shipment.
