Annie and I make her “cooking shows” all the time – like, she’ll be having yogurt and she’ll say, “MOM! Film me, I’m going to do a cooking show!…so to make yogurt, first you peel back the foil…” It’s been a while since I’ve posted one of her cooking shows, but I thought I’d share this one because it’s great for this time of year. Annie helped me make this fudge for my annual cookie exchange last weekend. It’s incredibly easy and really delicious.

If you want to make this easy fudge, here’s the recipe!
3 cups chocolate chips (semi sweet or milk chocolate)
1 14 ounce can condensed milk
4 tbsp butter
1 tsp vanilla
1/4 tsp salt
~Prepare 8×8 pan with aluminum foil. Spray with cooking spray.
~Combine chocolate chips, milk, and butter, and microwave for one minute. Mix all ingredients until smooth. If the butter is cold and not mixing together, you can microwave for another minute.
~When it is all melted, add vanilla and salt. Stir until smooth and well-mixed.
~Pour into pan and spread evenly.
~Place in refrigerator for two hours or until fudge is firm.
~Cut into 1″ squares and serve at room temp.
~Store excess in airtight container in refrigerator.

This is basically my fudge recipe, except I make it on the stovetop. BUT! This year I used peppermint extract instead of vanilla, and I put some crumbled-up candy canes on top. Huge hit at the office.

Let Annie know that I made the fudge after watching yesterday and it was delicious! At the bottom of the pan I put a thin layer of chopped Andies mints, then u topped it off with the fudge. Yum!
