When we were in Hawaii last fall, my parents watched the kids one night so Mike and I could have a date night. We went to eat at a restaurant called Fleetwood’s (as in Mick) where we had a delicious meal while we watched the sun set over Molokai.
My drink from that night stands out in my memory because it was so delicious. Called “The Lime In The Coconut,” it was the perfect mix of sweet and sour, similar to a Chi Chi (a piña colada with vodka instead of rum), but not blended. I’ve been dreaming about having one for weeks, and I finally decided to put together something similar. I came up with the Coconut Lime Sublime, inspired by Fleetwood’s.
You need:
- 1 can (approx. 15 oz) cream of coconut
- 2½ cups pineapple juice
- 1 cup sour lime juice
- ¼ cup pineapple flavored vodka
- ¼ cup coconut flavored vodka
- In a bowl, combine the ingredients. Use a whisk and mix well (coconut cream can be clumpy).
- Serve over ice or straight-up.
- Add garnish of your choice (umbrellas are my personal fave).
I find when I’m making this in such a large batch it’s easiest to mix it in a bowl or large measuring cup (I have a giant 8-cup measuring cup that’s perfect for this), then transfer it to a pitcher.
Pour yourself a glass and dream about the South Pacific.

Last year on our cruise I made it a point to always try the “Drink of the Day”. They were all delicious!

We were in Hawaii last June and loved Fleetwood’s!! I enjoyed making my way through the drink menu at the Old Lahaina Luau too. The Mai Tai became my favorite, but sadly they just don’t taste the same here in Wisconsin!

There is something about Hot Cocoa from scratch in the winter when we travel to the mountains. Not the stuff in packets, but the honest to goodness stuff made on the stove. After a day outside in the chill, it’s the perfect treat for everyone. Of course the adults can add a little extra something and the little ones get excited by the whipped cream and marshmallows!

This is so cheesy but one of my favorite vacay drinks is the Miami Vice (mixture of pina colada and strawberry daiquiri). It’s so sweet that you really just sip on one and then move on to something else or you’ll have the worst headache. I’m also pretty sure that it tastes 10x better when you’re sitting at a swim up bar basking in the sun

Had my first mojito in Palm Springs and it was so refreshing in the bone melting heat. Now I’m gonna dream about that all day at work–thanks! But the weird thing is whenever I get on an airplane, I start craving ginger ale. Don’t know why, but gotta have it on a plane.
My other current favorite drink is homemade butterbeer a la Harry Potter and the Three Broomsticks. I make a mean butterbeer if I do say so (and all the neighborhood kids will agree).

We go to Ocean Isle Beach every year with several family members and it amazes me every year the different drinks my cousins prepare for all of us. One of my all time favorites is a Miami Vice. You take rum, strawberry daiquiri mix, pina colada mix and ice and blend in the blender. It is the most refreshing drink when you are laying out by the pool or beach!
