Coconut Lime Sublime

When we were in Hawaii last fall, my parents watched the kids one night so Mike and I could have a date night. We went to eat at a restaurant called Fleetwood’s (as in Mick) where we had a delicious meal while we watched the sun set over Molokai.

My drink from that night stands out in my memory because it was so delicious. Called “The Lime In The Coconut,” it was the perfect mix of sweet and sour, similar to a Chi Chi (a piña colada with vodka instead of rum), but not blended. I’ve been dreaming about having one for weeks, and I finally decided to put together something similar. I came up with the Coconut Lime Sublime, inspired by Fleetwood’s.

A sweet and sour drink inspired by Fleetwood's in Lahaina.
Ingredients
  • 1 can (approx. 15 oz) cream of coconut
  • 2½ cups pineapple juice
  • 1 cup sour lime juice
  • ¼ cup pineapple flavored vodka
  • ¼ cup coconut flavored vodka
Instructions
  1. In a bowl, combine the ingredients. Use a whisk and mix well (coconut cream can be clumpy).
  2. Serve over ice or straight-up.
  3. Add garnish of your choice (umbrellas are my personal fave).

I find when I’m making this in such a large batch it’s easiest to mix it in a bowl or large measuring cup (I have a giant 8-cup measuring cup that’s perfect for this), then transfer it to a pitcher.
