My friend Tara makes the yummiest pumpkin bread. Once Fall comes around, I start bugging her to make it for me. She’s nice, so she does, and sometimes she even puts chocolate chips in it. YUM. But now that I’m learning how to cook, I can’t really beg Tara to make it for me anymore. So instead, I bugged her for the recipe. It’s super-easy and I now have several loaves of pumpkin bread to bring to my USC Football Tailgate tomorrow. I will be there bright and early for ESPN’s College GameDay to torment my sworn enemy, Lee Corso.
Anyway.
Chocolate Chip Pumpkin Bread
You need:
3 cups sugar
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cloves
1 tsp. cinnamon
3 1/3 cups flour
1 cup veg. oil
2/3 cup water
1 small can (or 1/2 large can) pumpkin (approx. 14oz)
4 eggs
1 cup of chocolate chips (or you can add nuts or raisins)
Mix together your dry ingredients.
In a different bowl, mix together your wet ingredients.
Slowly add your dry ingredients to the wet ingredients, mixing well.
Stir well, making sure there are no lumps.
Add chocolate chips (or nuts or raisins, although then it’s not chocolate chip pumpkin bread, IS IT?)
Pour into loaf pans. I used five mini-pans that are 5ish inches by 3ish inches.
Bake at 350 degrees for 60-70 minutes.

Hmm, this is definitely a fave in our house too, although growing up my mom once added one CAN of pumpkin instead of one cup. She cooked it for three hours and it never set up. Smelled terrible! Ick!

If you want to be really lazy, and skip some fat as a bonus, try this:
Pumpkin Choc Chip Cookies:
1 Betty Crocker Spice Cake Mix
1 Small Can Pumpkin, 15oz (Plain, not the pie mix kind)
1/4 of a bag of Nestle Semi-sweet Mini Morsels
-or-
1/2 bag regular size chocolate chips
In a bowl stir the pumpkin into the cake mix with a wooden spoon until mixed. Add choc. chips.
Drop onto silicone baking mat or slightly greased cookie sheet. (I use a cookie scoop -looks like a small ice cream scoop- so they all look the same since cookies will rise, but keep the same shape.)
Bake at 350 degrees for about 15 minutes or until done depending on your oven.
These end up being nice and soft cookies, and IMO taste best after they have cooled and the chips have solidified again.

I make a recipe that is nearly the same as this each year. It is a big hit. When I asked my husband what kind of birthday cake he wanted last February, this is what he wanted. I just threw some cream cheese frosting on top so it looked more birthday cakish! It was very yummy!

I LOVE the fact that you’re cooking and sharing recipes now. I’ve made a couple of your recipes. I even tried the pumpkin bread tonight and I don’t even like pumpkin. I don’t know if the pictures just make it so fun I want to try it or what. The bread is delicious. I only used about 1/4 tsp of cloves and I used white chips instead of chocolate. I’d definitely make it again and it made a ton of bread! Thanks for sharing!

I made this but used Splenda instead of sugar, and since I didn’t have baking soda, I used 3tsps of baking powder. It filled up one bread pan, but had a bit left over so I made 6 muffins/cupcakes.
The bread is still in the oven, but the muffins were delicious!

After I read this I went right out and bought the stuff to make them! I am a sucker for pumpkin stuff and they barely cooled before i served i split one mimi with my fiance as dessert. AMAZING!!!! I make pumpkin pies every fall, and I just buy the 100% pure pumpkin, because that’s literally all it is — pumpkin. As if you scooped it out and pureed it yourself. Nothing to be freaked out about there!

Thank you to both Tara and yourself for sharing this recipe. I just made this bread tonight (one loaf is still steaming hot) and while I typically profess to hating anything pumpkin, I might be in love. I had to swap the cloves for allspice due to poor pre-planning, and will have to knock myself out with benadryl due to an inconvenient cinnamon allergy, but it is SO worth it. This is going in my recipe box!

Made these tonight and they were YUMMY!!!! I think next time I will cut the cloves in half…cloves remind me of Christmas and it was weird eating pumpkin bread that smelled like Christmas, hahaha!! But boy are they tasty! I made 5 small loaves and they overflowed a bit…but I just scraped off the overflow.
