Slow Cooker Chicken Chili Verde

Mike and I received a gorgeous crock pot as a wedding gift. After the wedding, Mike and I had my parents over so I made my first attempt at domesticity. I found a recipe for Chili Verde that called for pork, which my dad doesn’t eat. So I modified the recipe to chicken. It was a hit. Go newlywed Heather!

With Jackie! in town, I wanted to make her dinner one night. I went into my recipe box (I know, I can’t believe I have one, either) and dusted off the Chicken Chili Verde. The recipe is SUPER easy. And obviously, you can always substitute out canned ingredients for the fresh version. I just don’t have that kinda time, yo.

Chicken Chili Verde

You need:

Slow Cooker Chicken Chili Verde

3 lbs boneless skinless chicken breast
1 1/2 bell peppers, chopped
2 large garlic cloves, minced
2 cans tomato sauce
1 large onion, chopped coarse
1 7-oz can green chiles, minced
3/4 cup beef broth
1/4 cup lemon juice
2 tsp ground cumin
1 tsp chili powder
2 tsp salt, to taste
2 jalepenos, chopped fine (optional)

chop your onion

Chop up your onion. You can chop it finely, but I suggest big pieces otherwise they will disintegrate when you cook them.

Have a good cry. Blame it on the onions.

chop your bell peppers

Chop up the bell peppers. They are heartier than the onions so you can cut them smaller, if you prefer.

mince the garlic

Mince the garlic. The recipe calls for two large cloves, but you can use more if you want a little more kick to the dish.

If you are going to add the jalapeños, carefully cut them up and remove ALL the seeds. Mike LOVES jalapeños, but I didn’t want the dish to be overwhelming so I only chopped up one.

Then he ate the other one. Sigh.

put the chicken in the crock pot

Add the chicken to the crock pot first.

add the rest of the ingredients

Pour your chopped veggies, tomato sauce, beef stock, and spices to the pot.

cook on high for 4 1/2 hours

Set the slow cooker to high for 4 1/2 hours.

Love your slow cooker.

shred the chicken

With thirty minutes left, shred your chicken.

Taste test time! Mike made a taco, while Jackie! ate hers out of a bowl with some grated cheese on top.

The recipe makes a ton of food, so it’s great for parties – or leftovers!

Ingredients
  • 3 lbs boneless skinless chicken breast

Instructions
  1. Prepare your ingredients.
  2. Combine all ingredients in a crock pot.
  3. Cook on high for 4 1/2 hours.
  4. With 30 minutes left, shred chicken, then stir.
  5. Serve with taco and burrito fixings. Is also delicious plain!
Notes

Makes GREAT left-overs!

Heather, this looks really good and a lot like what I call PACE chicken. You put the chicken in the crockpot and then pour a large jar of PACE picante sauce in…that’s it! Sometimes I’ll add a can or two of Pinto beans. And you are so right, this makes a TON of food.

So I was vegetarian for the past ten years and just decided to start eating meat again. I was absolutely terrified of cooking meat since I literally never have before. I wanted to marry my crock pot after I found out that you could just dump meat and a bunch of other stuff in there and it will cook it all for you! I’m so happy you posted this, I’m currently obsessed with crock pot recipes! I currently have chicken, a jar of jalepeno peppers and the liquid that was in the jar, a ton of spices, and chicken broth in mine :) Thanks for posting this!

So trying this tomorrow!! Cut the onion in half then soak it in a bowl of ice water for about 5 mins! They your eyes won’t tear up!

Crockpots rock. Nothing like tossing in a big hunk of meat and a bunch of veggies then leaving it slow cook all day &/or overnight.
Might try this recipe, sometime.

Quick garlic tip: lay the unpeeled clove(s) on your chopping surface; lay the blade of your chef’s knife flat on top and with all the force you can muster, hit the blade as hard as you like… BLAM! Instantly peeled and mashed garlic.

I made this last night with chicken broth instead of beef and it was AWESOME!!! So, yeah it works with chicken broth, but I’ve obviously never made it with beef broth, so not sure which is better…for you guys, that is. I don’t eat red meat, so I know I wouldn’t have liked it beef. I also left out the jalapenos because I didn’t think the kids would eat it with those in, and yep, still yummy. Thanks Heather.

Made this for my family last night. LOVE that I had all the ingredients including the chicken already! My husband GOBBLED it up! We ate it out of a bowl with tortilla strips in the bottom, cheese and sour cream on top. I love you crock pot!

1) If you stick a piece of bread in your mouth while chopping onions (any type! Keep it in the whole time for real!) the ‘chopping onion’ smell will not bother you! 2) dont touch your eye after cutting jalapano! This looks amazing, can’t wait to try!

A batch of this is chilling in my fridge, marinating and ready to go in the crockpot for dinner tomorrow night. I used an extra ounce of green chilis (all I could find were 4 oz cans) and omitted a teaspoon of cumin, apparently I had less than I thought I did. Crossing my fingers and hoping it still turns out ok. :) I love your recipe entries…they crack me up!

Thanks for posting this! My husband and I tried this last night. However, I read the ingrediants wrong when I went to the store! I had read two cans of tomatoes – so I bought tomatoes with the green chilies premixed in.

So I substituted in a can of diced tomatoes with green chilies instead of a can of green chilies. Then I used a can of tomato sauce and chicken broth! It was very good though! I will be making it again! Thanks for encouraging me to us my wedding gift crock pot that I had never used!

Made this overnight, and had some with an egg for a breakfast taco this morning. Loved it! I’ll probably have it again tonight in a burrito with sour cream and cheese.

I think next time I want to add a few cans of beans – make it a little more hearty.
